Food safety is important on the farm

Once the mushrooms have begun to grow, food safety protocols all go into effect. That means we were wearing hairnets and all while we went into the farm. And it was so hard not to touch! Those food safety protocols include having clear compost to grow in so temperatures are brought up high to insure the only fungus in there will be the mushrooms of interest.

What do mushroom farms smell like?

Seriously, WeI could totally smell mushrooms when we arrived. Sure you can smell compost too but wow. We will made us hungry.

Why do some mushrooms have more texture on the cap?

The texture you see on mushroom caps at times is called scaling. “Mushrooms are delicate. The scaling is done by humidity and airflow. You don’t want too much air blowing across them.”

Where are most mushrooms grown?

There are two counties in Pennsylvania that together produce 60 percent of the mushrooms grown in the US.
